A pillowy dream! That's what these cookies are. Oh so soft and plush. As an irregular take on a regular chocolate chip cookies, these are a definite win. The cream cheese really sings in this recipe in terms of the flavor and definitely in the texture! Please, please, please make these cookies because they will make your mouth and belly so happy! The time is right for these light but sinfully delicious pillows of joy!

Vegan Cream Cheese Chocolate Chip Cookies

Ingredients:

1 cup vegan cream cheese
1/2 cup vegan margarine
3/4 cup brown sugar
3/4 cup vegan granulated sugar
3 tsp ener-g egg mixed with 1/4 cup water
1 1/2 tsp pure vanilla extract
2 1/2 cups unbleached flour
1 tsp baking powder
1/2 tsp salt
1 1/2 cups vegan chocolate chips
Directions:
Preheat oven to 350ºF and line a cookie sheet with parchment paper or silpat.

Directions:
Preheat oven to 350ºF and line a cookie sheet with parchment paper or silpat.
Cream together, with hand mixer, margarine, cream cheese, and sugars
until fluffy.
Beat in the egg replacer mixture and vanilla.
Stir in the flour, baking powder and salt and mix well.
Fold in the chocolate chips.
Scoop the dough in tablespoons onto the cookie sheet, leaving about 1
inch between cookies.
Bake for 12-15 minutes or until the edges begin to turn golden brown. The
cookies might feel gooey out of the oven but they will harden up so don’t over
bake!
Well I am not sure if I would use everything vegan..I hope that wouldn't ruin the recipe :) They definitely look worth trying :)
ReplyDeleteIt definitely should work with regular cream cheese!! and you could probably use 1 egg in place of the ener-g egg replacer. Let us know how they turn out! :)
