Fantastic Friday

I had very good intentions for Fantastic Fridays but I didn't keep up my promise. I'm sorry! I apologize and will make up for it with more good intentions of carrying out this series through the summer months.

Peanut Butter Fudge Brownies

After a much needed and thoroughly enjoyed vacation, we are back. Back to "regular" life, back to baking, and back to our daily frustrations (and excitements). 

Sometimes reality bites and that's where these butter-laden brownies come in. Riley and I don't normally bake with butter and tons of white sugar but sometimes you just need it. 

Making these brownies was surprisingly therapeutic and relaxing. Eating them was amazing and happy-making to say the least. 

So when things aren't as great as life on vacation... make these brownies!

Peanut Butter Fudge Brownies

Adapted from Becky Bakes

1 cup (1 stick) butter, melted1 cup white sugar1 teaspoon vanilla extract2 eggs1/2 cup soft whole wheat flour2/3 cup cocoa1/4 teaspoon baking powder1/4 teaspoon salt3/4 cups peanut butter1/4 cup honey3/4 cups chocolate chips3 tbsp. butter

Brownies: Heat oven to 350°F. Grease a 8x8 inch baking pan.Stir together butter, sugar and vanilla in bowl. Add eggs one at a time, beating after each one. Stir together flour, cocoa, baking powder and salt. Add to butter mixture, beating until well blended. Spread batter evenly in prepared pan.Bake 20-25 minutes or until brownies begin to pull away from sides of pan and toothpick comes out not quite clean. Cool completely in pan on wire rack.

Peanut Butter Filling: Stir together peanut butter and honey. Spread over cooled brownies.

Ganache: Melt butter and chocolate chips together in a microwave-safe bowl, stirring every 30 seconds, until smooth. This should only take 1-2 minutes. Pour evenly over brownies and spread carefully. Cool on counter or in refrigerator until set.

Baked BBQ Onion Rings

I just love onion rings. But we all know they aren't the healthiest food choice so we made this baked version which comes complete with bbq sauce.

They are delicious!

We kind of got carried away with the pictures so please excuse us as we experiment and hopefully improve.

  • 1 cup barbecue sauce of your choice
  • 2 large eggs, lightly beaten
  • 4 tablespoons flour
  • 3 cups panko bread crumbs
  • 2 medium to large sweet onions, sliced into 1/2-inch rings
Preheat oven to 450 degrees. Place two baking sheets in the oven and let those preheat too.
In a medium bowl, whisk together barbecue sauce, eggs and flour. Place bread crumbs in a separate bowl.
Using tongs (or your fingers) dip onion slices in the barbecue sauce mixture, shake the excess off and then dunk on all sides into the bread crumbs. Lay flat on a cool service. Repeat the process with all the onion slices.
Remove hot baking sheets from the oven and spray lightly with cooking spray. Move coated onions to hot baking sheets. Spray the coated onions lightly with cooking spray.
Bake for about 6 minutes, or until golden, then use tongs to turn each onion ring over. Spray the other side of the onions with cooking spray and bake for an additional 6 minutes. Watch closely to make sure the crumbs don't burn.
Remove from oven and serve immediately.

Hi!! I haven't done one of these in such a loooong time so I thought it was time to get back to it.

This isn't beauty related but OH are these good! Waaaaay better than Oreos like OMG so much better.I tried them for the first time when on vacation - $1.30 at Big Lots. Haha can't go wrong there! I did however have the gluten-free variety.

And totally random but just thought I'd mention it... I think that Christina's concerns with Tony Lucca's final song are COMPLETELY valid and salute her for stating them! Just a little drama you'll know about if you watch the Voice.
